- Bourbon Vanilla Bean Scones
One cup of organic whole wheat pastry flour or organic white flour
One cup of bread flour (I think this is the secret - don’t skip this ingredient!)
One and a half tablespoon of organic cane sugar
One tablespoon of aluminum-free baking powder
Half a teaspoon of sea salt
One-fourth a teaspoon of baking soda
Six tablespoons of organic non-hydrogenated shortening, like Spectrum
Half a vanilla bean, seeds scraped out
Half cup of almond milk, or other non-dairy milk
One fourth a cup of vanilla-infused bourbon (learn more about infusing your own liquor!)
- Vanilla Bean Glaze
Half a vanilla bean, seeds scraped out
Half a cup of powdered sugar (vegan)
A few tablespoons of water
Directions
- To make this Bourbon Vanilla Bean Scones Recipe, preheat the oven to 425 degrees. If you want to make drop scones, bake the dough according to this recipe. Grease a springform pan with coconut oil or shortening whether you’re baking them into triangles. You will get eight scones from this Bourbon Vanilla Bean Scones Recipe.
- Combine the flour, starch, baking powder, sea salt, baking soda, vanilla bean seeds, and shortening in a food processor. Combine the ingredients in a food processor and process until the dough resembles a meal. Pulse a few times after adding the liquid ingredients. The dough should have the consistency of a thick batter.
- Press the scone dough into the springform pan with slightly damp hands and smooth it out. As appropriate, wet your hands. The scones will keep their form if you bake them in this manner. For 30 minutes, place the dough/pan in the freezer.
- Remove the pan from the freezer and open it when it’s done. Cut eight scones out of the dough and put each one on a parchment-lined baking sheet. Since the dough is semi-frozen, it should be easy to cut.
- Bake the scones for 15-18 minutes in the oven.
- When the scones have fully cooled, combine the glaze ingredients, so they have the consistency of Elmer’s Glue. There will also be lovely vanilla bean flecks in the glaze! I tried a couple of different glaze techniques, but I think they look best fully coated in it.
