If you made my Cilantro Pineapple Island Escape Pops, you know that ice pops are the best way to cool down during the summer. To celebrate the 4th of July (and the World Cup), you can make these easy Red, Wine, & Blueberry Ice Pops pops with your booze of choice!
Red, Wine, & Blueberry Ice Pops

- Red Layer:
scant 1 c. strawberries, preferably organic
1 T. wine
1 T. pure maple syrup
- White Layer:
scant 1 c. of coconut water or coconut milk
1 T. coconut rum (or white wine)
- Blue Layer:
scant 1 c. blueberries, preferably organic
1 T. wine
1 T. pure maple syrup
Directions
- So easy – simply place the red ingredients in a blender to combine. Pour the red ingredients into your pop molds.
- Wait at least an hour to add the white layer. If you want complete color separation (no bleeding), wait 2 hours between layers. (I did mine every hour because I’m impatient!) After you’ve completed the first two layers, puree the blue layer in the blender and pour it into your molds. Let them fully set for 6 hours or more.
