No-Churn Ice Cream - From Fresh Snow!

Living in Virginia, we don’t get a ton of snow, especially in Fredericksburg. Maybe about two to three really good snowfalls per year. We just had one about a week ago - 8 or 9 inches, which is a lot by any standard!

Our family and friends in the northeast, especially in the Boston area, have been hit pretty hard this year. They have had to dig themselves out several times!

Did you get snow this weekend? Or perhaps it’s forecasted for the upcoming week? If so, you may start to despair. It’s that time of the year when people want the snow to melt and spring to come. I know my hubby feels that way. A few weeks ago, we were teased with a 70-degree day (in February!), and we can’t get over it. We’re ready for spring.

But, you might as well make the best of it. Lemonade from lemons, as they say. If you’re going to have snow, let’s make some fun, instant ice cream! This No-Churn Ice Cream Recipe can be made kid-friendly with a little tweaking. All you need is a handful of ingredients that you probably have on hand.

This No-Churn Ice Cream Recipe can be quickly mixed and put together in about 2 minutes. It’s just the right amount of sweet and icy. And it’s a fun DIY project for a snowy day! This particular recipe serves about 2-3 people; be sure to double it if you have more people. Since it needs to be eaten right away, make it in smaller batches!

Lightly adapted from All Recipes

Ingredients

  • 4 c. fresh snow

  • 1/4 c. organic cane sugar

  • 1 T. vanilla-infused bourbon (learn more about infusing your own liquor!)*

  • 1/2 c. coconut milk or other non-dairy milk

    *You can flavour your ice cream with really anything; vanilla’s usually the easiest. You can use peppermint schnapps, amaretto, or whatever sounds good to you!

Directions

  • For this No-Churn Ice Cream Recipe, gather your snow, making sure it’s clean. Combine all of the ingredients and stir. It’s that simple!
  • Another fun idea: you can make a self-serve ice cream bar with all the toppings you’d find at a frozen yoghurt place! Think about adding fruit, granola, sprinkles, chocolate chips - the works! It’s a fun snow day activity!
