Copycat Bailey’s Irish Cream - Made Vegan!

I’m not a huge fan of creamy alcoholic drinks, such as Bailey’s or Godiva Liqueur. It just tastes a little sketchy to me. When I make my own, however, it just reminds me of a delicious boozy smoothie.

I looked at a few homemade recipes and decided to wing my own. Some elements were obvious to change (ahem, the cream), but others were a little bit of trial and error. The dates, for instance. You can use whatever type of sweetener you want to - maple syrup, agave, stevia, etc. - but it does need a little something to sweeten it up, in my humble opinion. The dates in this Copycat Bailey’s Irish Cream Recipe give the “Irish cream” a bit of a thickness that is pleasant and reminiscent of the real thing.

A word to the wise: unless you have an amazing blender (read: Vitamix), you’ll want to strain the cream once you’ve finished. It would be weird to drink your glass and find a chunk of date in it. Another word to the wise: this Copycat Bailey’s Irish Cream Recipe is pretty boozy! You may want to cut down on the alcohol if you plan on drinking it on the rocks.

Ingredients

  • 2/3 c. Irish whiskey

  • 1 tsp. instant coffee

  • 2 tsp. cocoa powder, like Guittard

  • 1 tsp. vanilla

  • 1/4 tsp. almond extract

  • 10 medjool dates, pitted

  • 3 c. almond milk, or other type of non-dairy milk

  • Nederlandse Bookmakers

Directions

  • To make this Copycat Bailey’s Irish Cream Recipe, in a blender, puree all of the ingredients until smooth to your desired consistency. Taste the mixture to be sure it doesn’t need any additional sweetener.Copycat Bailey's Irish Cream Recipe
  • Strain the liquid to get any leftover date chunks out.
